I am a big fan of Cooking Light, especially when they publish cookbooks. One of the latest I picked up a Costco for under $20. There are so many great tasting, fast prep, healthy meals in it that we all love. Check out tonight’s dinner. This is quickly becoming a new favorite.
Lemon-Herb Skillet Pork Chops from Cooking Light – Fresh Food Fast (2009)
I serve it with the Sweet Pea and Bell Pepper Toss (shown in picture)
However, I’ve never seen refrigerated prechopped onion or tricolor bell pepper in my grocery store, so I end up doing a bit of chopping, but I don’t mind. I chop the smallest onion that I can find in my cupboard and chop about a third of a green, yellow, and red bell pepper. The remainder of the peppers I throw in spaghetti sauce later in the week. To round out the meal, I serve a type of rice, like Rice-A-Roni (Nature’s Way is really good).
A glass or two of white wine and we’re set. Cheers, friends!
