To continue celebrating autumn with food, I’ve got a great salmon recipe that flaunts fall for me. This is one of my favorite dinners that encourages me to put on a cozy sweater, invite friends over for dinner and have apples dipped in caramel and hot toddies for desert. This dinner is easy, yummy, and just warms me up thinking about it. I tend to keep frozen salmon fillets in my freezer because I buy them in bulk when they go on sale (and yes not farm raised…gross!). All the other ingredients I have in my pantry and I just picked up the zucchini at the market. Tonight I’m serving it with my new favorite grain, Trader Joe’s Harvest Grain (love it!). This entire delicious dinner takes about a half hour to prep & cook. I’m pouring my pinot noir right now and getting cooking. Cheers friends and I hope to have you over soon!
