Each week I post a new recipe and many of my friends think that I’m some sort of Martha Stewart. I promise you, I am pretty darn far from Martha. The fact is that I love to eat good food and I’ve discovered a love of cooking (that giggle and snort that you may have just heard is from my grandmother’s grave). But to prove that I’m not always preparing a fancy meal seven days out of the week, I’ll show you generally what I cook on Monday night’s, it’s called What’d Ya Got Spaghetti Pot.
I always do my grocery shopping on Tuesday after BabyD’s swim class. So Monday nights are generally reserved for leftovers or cleaning out the fridge with whatever we’ve got. What’d Ya Got Spaghetti Pot is made from whatever you can find in the freezer and whatever vegetables are about to go bad. No, I’m not kidding.
- Frozen meatballs
- Left over portions of yellow and red onion
- 1 Tbsp minced garlic (always on hand)
- remnants of frozen spinach from last month’s Sausage & Veggie Ziti
- chopped up remainder of baby carrots (admittingly, those were iffy)
- handful of frozen corn
- leftover bit of broccoli from last week’s Broccoli and Cheese Pasta Bowl
How’s that for fancy? Brown the meatballs with the onions, stir in the frozen veggies to warm, pour in the jar of sauce and simmer. Looks good. Tastes even better. And the kids don’t even realize all the veggie goodness they are getting. (hee hee hee)
So maybe you do the What’d Ya Got Spaghetti on Sundays, but it’s a great way to clean out your fridge and whip up something delicious at the last minute. Even better, enjoy with a really big glass of red wine. Cheers!
