My friend Jessica always brings this great lentil bruschetta to all the JenH Happy Hours. I’ve been craving it lately and thought it would be an ideal appetizer to bring to my next book club meeting. Perfectly healthy and delicious, it’s a nice earthy offset to all the rich and sugary foods that we shared during the holidays.
Jessica and I get all the ingredients at Trader Joe’s, but you may find something similar in your regular grocery stores.
2 cups of steamed lentils, chilled
1 cup of bruschetta sauce (click link if you want to make your own)
½ cup of crumbled feta cheese
Mix together in a bowl and serve on crackers or sliced crusty bread. Yum!





Yummmmmmm! I’ve been a vegetarian for a long time and always like to find new (and easy) veggie recipes.

What kind of crackers would you recommend for this?
Please excuse me for being a smart ass, but I’d say good ones. No Ritz or buttery crackers. Whole grain ones would be me choice, but it also works great with flatbread and soft pita bread.
Definitely was not thinking ritz or something like that. I ended up doing a few choices: pita chips, melba snacks whole grain and whole wheat crackers.

Believe it or not my wife invinted this recipe as an employee for trader joes and a vegetarian. She and and a friend from puerto rico who is also vegetarian came up with this recipe for summer. With those three ingredients it take nomore than 3 minutes to make. I currently use this recipe in my mobile wine tastings since than.
